A few evenings ago Zach and I made the PB Cookies from the recipes on this website and they were awesome! First, they were super easy with only a small list of ingredients. Second, they weren't too sweet like so many cookies are these days. And lastly, we made them a little healthier, and I think better tasting as well! How did we do it? Well, we didn't use all white flour, as we rarely ever do. This recipe calls for 1 3/4 cups flour. Here is the breakdown of what we used:
1/2 cup organic white flour
1/2 cup wheat pastry flour
1/4 cup almond meal flour
1/4 cup sorghum flour
1/4 cup oat flour
I just use the Bob's Red Mills brand of flours, but you can use any flour you have access to. Experiment and see what you like as far as taste and texture. I have found that a little white flour helps bind things together. If you use 100% almond flour for instance, your cookies may come out very crumbly.
Next batch we will mix things up a little and use some brown rice flour and some ground flax. Be creative and experiment with different recipes. And, by the way, if you have a recipe that you think is pretty incredible and it uses pure maple syrup or maple sugar as the sweetener, send it to me.
